and the word for "climbing up the eel.

The restaurant's name, Togawa, is derived from the character for "climbing" in the Japanese phrase "to climb up a river" and the bottom power of the eel that comes up strongly from the sea

Togawa serves not only eel and kashiwa dishes in the evening, but also "two-year aged eel" which has been served since the Edo period.

Togawa serves not only eel and kashi-yaki dishes, but also miso nabe and sukiyaki nabe made with "Maruya Hatcho Miso" and chicken broth, both aged for two years, and served in Iwate Prefecture's Nanbu iron pots.
